According to Funk Vitamins are Biocatalyst.
In our Body 70 percent Of Reactions are with the help Of enzymes But 30Percent Reactions occur by Vitamins.
Without Vitamin approx 30 Percent Of Reactions will not Occur.
There are no Calorific value in vitamins like Carbohydrates,Fats, Protein and Nucleic Acid But it Help in Energy Synthesis.
Vitamins are destroyed by High heat and Excess Salt.
Types
According to Solubility Vitamins are of 2 types:-
1. Fat Soluble Vitamin:-
The Vitamins are Soluble in Fats and it's Products.
It destroys in High Temperature and Stored in Body For 4 to 8 Days.
It is Of 4 Types:-
• Vitamin A ( Retinol )
• Vitamin D ( Calciferol )
• Vitamin E ( TocoPherol )
• Vitamin K ( Prothrombin )
2. Water Soluble Vitamin:-
The Vitamin is Soluble in Water and Easily Destroyed by Salt And High Temperature.
It does not Store in Body So it is Daily Required in Food.
It is of 2 Types:-
• Vitamin B Complex ( B1, B2, B3, B5, B6, B7, B9, B12,)
• Vitamin C
